Taco Tuesday

Good habits are important, and while they can often be hard to stick to, I’ve found that I am quite successful with any habit that includes coffee + tacos. I host my family for tacos every Tuesday and it’s one of the highlights of my week (I think my family would agree!). I look forward to this every single week and have gotten it down to a very, very simple science! The shopping list is short, the prep takes no time and your family will be begging you to make this for them again and again (and again!).

Let’s get into it: 

You’ll need:
Chuck Roast (we use the pack of two from Costco to feed 6-8+ with leftovers!)
Chicken broth
1 Cup Salsa Verde
One packet street taco seasoning (I love Siete and Ortega seasonings)
Mike’s Hot Honey 
Mission thin corn tortillas 
Avocado oil 
White rice 

What to do:
1. Cut each roast in half before putting in the crock pot. My husband graciously does this part every week. Bless him! 
2. Cover the bottom of crock pot with broth and sprinkle seasoning packet over meat. Cook all day on low. 
3. 10 min before you’re ready to serve, take out of crock pot, shred on a cookie sheet (it will fall apart!) and drizzle with the hot honey. 
4. Broil until crispy (5-8 minutes). 
Pro Tip: Scrape the crispy bits off of the sheet! They’re the best part. (This is always my uncle’s job!)

Rice:
Sauté rice in a couple tbsp avocado oil on high heat until aromatic or lightly browning. Cover with broth (2:1/broth:rice) and bring to a boil. Cover and turn to low.
THE TRICK: Do not open for 25 min! I promise it will be perfect 😉

Extras:
Your favorite chips and salsa 
Corn on the cob (top with queso cotija + a sprinkle of chili powder for the perfect street corn!)
Queso cotija 
Avocado
Cilantro lime crema (Costco)
Sour cream
Sriracha

The Lacy Lately Marg: 4 oz of your favorite tequila, the juice of one grapefruit, one orange, and a lime, dash of agave. Shake, pour over ice and top with your favorite sparkling water! (Serves 2)

Ready to take Taco Tuesday up a notch? Save your empty tequila bottles and throw fresh blooms in them for easy flower arrangements! Add tea lights, a fun Mexican station on Spotify and you’ve got yourself a fiesta, girlfriend!
